What' for lunch? Spicy Ramen with Beef and Bok Choy

1 pound lean ground beef

3 tablespoon hoisin sauce

2 tablespoon soy sauce

2 tablespoons chopped scallions

1 teaspoon ground ginger

3 cloves of garlic, crushed

Salt and Pepper to taste

1 head Bok Choy, chopped into bite-size pieces

4 cups of water

4 3 ounce packages instant ramen noodles, spicy flavored (use 1-3 of the Flavor Packets depending on how much spice you like)

Combine ground beef, hoisin sauce, soy sauce, scallions, ginger, garlic, salt and pepper to taste in a skillet. Cook, breaking up the meat until browned, about 5 minutes.

In a separate pot, bring 4 cups of water along with the flavor packets to a boil over high heat. Add the bok choy and ramen noodles. Cover and cook stirring halfway through about 4 minutes until noodles are done and bok choy has softened. Add the beef mixture and toss to combine.

Serve and enjoy!
